Comments: Comments only: 1. A non-commercial food saver reduced oxygen packaging machine is present in the kitchen. Per interview with the executive shelf, Scott Dewar, the machine has not been used in a long time. There is no food that has been vacuum sealed using that machine currently present at the establishment. Provided education and Scott agreed to remove the machine from the facility. Use of a reduced oxygen packaging machine at the facility is prohibited unless a scheduled approved process is submitted, reviewed, and approved by either the Glens Falls District Office or another approved scheduled processing authority. 2. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.

Comments: All internal hot and cold food temperatures measured with a metal stem food probe thermometer are 140 degrees F or above, and 45 degrees F or below respectively. The low temperature mechanical dishwasher is operating at the proper temperatures, and a proper sanitizer concentration of 100ppm. The three on-site 0-220 degree F stem probe thermometers validate calibrated at 32 degrees F in a 32 degree F ice water bath, but it's recommended to obtain a thermocouple metal stem food probe thermometer as well.
