Comments: All temperatures taken using DOH thermapen were within acceptable range: Milk- 41 degrees F, shredded cheddar cheese- 43 degrees F. A spray bottle with a blue cap was observed behind the bar. Per interview, the spray bottle contains windex and the operator and staff distinguish cleaning sprays by the spray bottle cap color. Advised to label any cleaning equipment/ spray bottles.

Comments: Education was given on the importance of maintaining a cleaning schedule for eliminating grease build up on the stainless steel wall behind the deep fryer. Carpeting was removed from portion of back office were food is stored revealing a concrete floor that is an absorbent surface. Please make sure that the exposed concrete floor is sealed to make it a smooth, easily cleanable, non-absorbent surface. All food temperatures, as taken with DOH thermapen were in the acceptable range.
