Comments: have been doing buffet style service with both camps onsite. Today family style was done for grange camp. The menu for lunch was grilled cheese and tomato soup. Dinner menu was to be turkey dinner. The 5 to six pound processed turkey pieces were frozen at 11:00 am. Dinner was to be at 5:00 pm. The turkeys were not going to thaw in time to properly cook. The turkeys were put into the preparation sink under cool running water to start the thawing process and the dinner menu was changed. Chlorine residual in the kitchen was .5 ppm. at the time of inspection. Milk put out at time of lunch on ice, vegetables put out under the sneeze guard at time of service. All other food was served family style at the tables.
